Wee Cook Wednesday: Ten-Minute Chili

morningstar-veggie-crumblesIf this is vegetarian, sign me up! (Seriously.) Even my carnivore husband was happy! You’ll need . . .

1 medium onion, chopped
2 Tbls olive oil
1 package (12 oz) Morning Star crumbles (or other soy crumbles)
1 can (28 oz) Dei Fratelli Seasoned Diced Tomatoes (has celery, onions, garlic, etc.)
1 can (16 oz) Bush’s Chili Beans
1 can (16 oz) red kidney beans, drained and rinsed
1 tsp each cumin, garlic powder, and chili powder
1 C sharp cheddar cheese, grated
corn chips.

Heat oil in large skillet, add onion and saute 2 minutes or until brown. Add diced tomatoes, beans, spices and crumbles, cook 8 minutes or so until heated through. Top with cheddar cheese, and scoop up with corn chips.

If you’re still not sure about crumbles, try this “Best Vegetarian Chili in the World!”
